Banana peanut butter french toast

Ingredients.

  • 8 slices of bread (whole wheat or brioche)

  • 4 ripe bananas, sliced

  • 4 tbsp peanut butter

  • 4 eggs

  • 1/2 cup milk

  • 1/2 tsp cinnamon

Instructions.

  1. Spread peanut butter on one side of 4 slices of bread. Layer banana slices on top and sprinkle cinnamon over top.

  2. Close the sandwiches to make 4 full sandwiches.

  3. In a shallow bowl, whisk together eggs and milk.

  4. Dip each sandwich into the batter. Coat both sides well.

  5. Heat a skillet or griddle over medium heat and add a little butter. Cook each sandwich for 2-3 min per side until golden brown and cooked through.

  6. Serve with maple syrup, berries, butter, and/or powdered sugar.

Notes.

This recipe is meal prep-friendly. You can prepare a large batch and store it in a ziploc bag in the freezer for up to 3 months. Reheat in an air fryer or microwave when ready to serve.
