Banana peanut butter french toast

Ingredients.
8 slices of bread (whole wheat or brioche)
4 ripe bananas, sliced
4 tbsp peanut butter
4 eggs
1/2 cup milk
1/2 tsp cinnamon
Instructions.
Spread peanut butter on one side of 4 slices of bread. Layer banana slices on top and sprinkle cinnamon over top.
Close the sandwiches to make 4 full sandwiches.
In a shallow bowl, whisk together eggs and milk.
Dip each sandwich into the batter. Coat both sides well.
Heat a skillet or griddle over medium heat and add a little butter. Cook each sandwich for 2-3 min per side until golden brown and cooked through.
Serve with maple syrup, berries, butter, and/or powdered sugar.
Notes.
This recipe is meal prep-friendly. You can prepare a large batch and store it in a ziploc bag in the freezer for up to 3 months. Reheat in an air fryer or microwave when ready to serve.
